WHOLE WHEAT ORECCHIETTE

Orecchiette are the symbol of traditional Apulian cuisine. In dialect, " l' strascnat " literally means "dragged," from the custom of "dragging" the pasta across the Tavoliere (a traditional work surface) with your finger to create a round, concave shape . Traditionally , this pasta is made by hand. Grandpa Michele recommends a Apulian recipe, "Orecchiette e Ricci": whole-wheat orecchiette, sea urchins, chopped cherry tomatoes, chili pepper, garlic, extra virgin olive oil, and parsley .
