IDEAL FOR ORECCHIETTE AND CAVATELLI
This is the ideal semolina for making orecchiette and cavatelli from Puglia. Procedure for making them by hand: place the semolina on a pastry board or work surface , add water "a' ferve" (in the Bari dialect, this means very hot) and then slowly mix the water and semolina . Work the dough until it becomes a thick mass. Then cut the dough into pieces and create long sticks to make orecchiette and cavatelli.
