Apulian recipe:
Grandpa's trofie are a traditional artisanal pasta from Puglia with a characteristic long, braided shape, perfect for showcasing the products of our land.
Let's go shopping:
- 500g of trofie
- 300g of Gallipoli prawns
- 200 g of cherry tomatoes
- 1 bunch of wild rocket
- 1 clove of garlic
- extra virgin olive oil to taste
How to prepare:
First, brown the garlic in a pan. Then add the cleaned and shelled shrimp and sauté for a few minutes. If you prefer, you can reduce the shrimp with half a glass of white wine. Then add the chopped cherry tomatoes. Let cook for a few minutes and, in the meantime, boil the trofie in plenty of salted water, drain when al dente, and add it to the sauce. Let it blend for a few minutes over low heat. Finally, add the wild arugula and your dish is ready. Serve hot.
