They're typically produced during the hottest months of the year due to the drying process required, but the end result is truly worth it.

  • 5 kg red tomatoes
  • Coarse salt
  • Parsley
  • A little chili pepper
  • Capers
  • Oil to taste
  • Garlic

How to prepare it

Take the red tomatoes, cut them in half, and arrange them on trays, cover with coarse salt, and let them dry for days. Once they're ready, rinse them with vinegar, squeeze them well, and place them in a jar, where you can season them with oil, capers, garlic, parsley, and a little chili pepper. And there you have it, your tomatoes in oil.
