Orecchiette with cabbage, lard and garlic
A typical dish from Puglia, the use of lard in particular distinguishes the Bari version. It can be considered a healthy dish thanks to the use of cabbage, and is highly prized and often eaten by residents of this southern Italian region.

How to prepare it
Take a pan and add the previously chopped lard. Once melted, add the garlic and cook until golden. In a separate pot, cook the cabbage until half cooked, then add the orecchiette and cook. When the pasta is ready, toss it with the cabbage, lard, and garlic. Serve hot, garnished with pecorino cheese.
