Fava Beans and Chicory Poor Man's Style
: One of the typical dishes of Puglia, particularly from Bari, is based on broad beans and chicory, a simple, humble dish, but very tasty, as well as healthy.
Made with just a few inexpensive ingredients, it can be served as an appetizer or a first course, and can be enjoyed hot or cold. For a more refined dish, it's recommended to serve it with toasted bread and perhaps some cherry tomatoes.
Let's go shopping:
- 400 g of broad beans
- 400 g of chicory
- two bay leaves
- salt to taste
- oil to taste
How to prepare:
Soak the fava beans for 12 hours in a bowl of plenty of cold water. Then rinse the beans and cook them in a pot, adding the bay leaves, either chopped or whole. Cook over low heat for about 2 hours: as the beans release a little foam, remove it with a slotted spoon. Meanwhile, you can blanch the washed and cleaned chicory in salted water. When ready, drain and set aside. Meanwhile, continue cooking the fava beans, adding a little salt and finishing by stirring the beans. Finally, arrange the fava beans on a plate with the chicory and drizzle with oil. Serve hot with croutons.
