Aunt Nina's Potato Croquettes

Much loved by adults and children alike, they can be served as an appetizer or to accompany a main course, potato croquettes are a delicious dish typical of southern Italy that wins everyone over and comes in several variations.


Let's go shopping

  • 1 kg of potatoes
  • 4 eggs
  • 100 g of cheese
  • parsley to taste
  • salt to taste
  • breadcrumbs to taste

How to prepare it

First, boil the potatoes in boiling water, remove them while still hot, and peel them. Mash them with a potato ricer and then season them with the eggs, cheese, salt, and parsley. Shape the mixture into croquettes and coat them in breadcrumbs. Heat some vegetable oil in a pan and, while it's hot, fry the croquettes.
