- 500g cavatelli,
- About 700g of fresh octopus
- approximately 500g of chopped cherry tomatoes
- parsley
- EVO oil,
- half a glass of white wine,
- a clove of garlic
- a pinch of chili pepper.
How to prepare it
Rinse the octopus under cold running water and rub the head and tentacles with your hands. Pat the octopus dry, transfer it to a cutting board, and remove any inedible parts. If using a large octopus, pound it with a meat tenderizer. Chop the tentacles and head into small pieces. In a pan, sauté the chili pepper and a clove of garlic. Add the cherry tomatoes and crush them to release their juices and create a sauce. Add the chopped octopus and cook until combined. Add the white wine and let it evaporate for a few minutes, then season with salt. Cook until the octopus is tender and the sauce released by the tomatoes has thickened. Meanwhile, cook the cavatelli in plenty of salted water. Once cooked, toss with the octopus sauce. The dish is ready. Serve with finely chopped fresh parsley.
