Apulian recipe: Capunti Grandpa's pasta, Murgia cardoncelli mushrooms, cherry tomatoes, extra virgin olive oil, breadcrumbs, pecorino cheese, parsley, garlic and chilli pepper
Capunti are a type of pasta typically handmade by housewives on traditional wooden boards. They are elongated cavatelli made from durum wheat semolina, and it's not uncommon to see them drying on the boards along the alleys of Bari Vecchia, alongside the more famous orecchiette.

- 500 gr Grandpa's Capunti,
- 1kg Murgia cardoncelli mushrooms,
- 500g cherry tomatoes,
- 50 g breadcrumbs,
- 30 g pecorino cheese,
- 1 clove of garlic,
- 1 bunch of parsley,
- oil to taste,
- chili pepper to taste
How to prepare it
Clean the mushrooms, removing any dirt, cut them into strips, and rinse them under running water. Next, sauté the garlic clove and chili pepper in a drizzle of oil, then add the mushrooms. After letting them cook for a few moments, add the diced cherry tomatoes. Season with salt and continue cooking over high heat for about ten minutes, stirring frequently. Heat a little more oil on the side, add the crumbled breadcrumbs, and brown them. Meanwhile, cook the pasta until al dente, drain, and toss it in the pan with the mushrooms and tomatoes, adding a ladle or two of the pasta cooking water if necessary. Stir well and let the liquid absorb. Finally, turn off the heat and sprinkle with finely chopped parsley and breadcrumbs. Mix well and serve hot, adding grated pecorino cheese to taste. The dish is ready.
